  1. First of all, you need to wash and peel the eggplants. According to this recipe, you need to clean them like this: cut strips of skin along the eggplant with a knife so that there are also uncleaned areas left. That is, our eggplant should resemble a zebra - black stripe, light stripe, etc.
  2. There is no need to cut off the tail (peduncle).
  3. In each eggplant we make a cut along the entire vegetable: half its depth.
  4. Then put the eggplants in a deep bowl, pour cold water so that it covers the eggplants, add a pinch of salt and leave to soak for 30 - 40 minutes (to remove the bitterness).
  5. Grease the baking tray well with vegetable oil.
  6. We also grease each eggplant with vegetable oil (I do this with a silicone brush) and place it on a baking sheet.
  7. Preheat the oven to 180 degrees and bake the eggplants. They should brown and become soft. The baking time may be different for everyone: since all ovens bake differently, and the eggplants themselves may differ in size.
  8. Cut the onion into small cubes.
  9. Heat a frying pan, add a small amount of vegetable oil and add chopped onion.
  10. Finely chop two cloves of garlic and place in a frying pan.
  11. Cut the sweet pepper into small pieces and also add it to the frying pan (leave a few pieces of pepper to decorate the stuffed eggplants).
  12. Finely chop the parsley and add to the pan.
  13. Add minced meat to the pan and fry everything together.
  14. Add ground black pepper and salt to taste.
  15. Take the rosy eggplants out of the oven, push their flesh apart along the cut right on the baking sheet (should resemble boats), sprinkle a little sugar on top of the eggplants.
  16. Fill each boat with minced meat filling.
  17. Place a slice of tomato and a slice of sweet pepper on top.
  18. Dilute the tomato paste with water in a ratio of 1:2 and pour the tomato solution into a baking tray.
  19. Place the baking sheet with Turkish stuffed eggplants in the oven (temperature 180 degrees) for 20 - 30 minutes.
