Rinse the buckwheat and add to boiling salted water. Cook until soft for 15 minutes, drain off excess water and cool the cereal. This is easy to do by pouring the buckwheat into a sieve. If the cereal is slightly undercooked, it’s okay; it will cook through the stewing process.

Cut chicken meat and 1 onion into medium pieces and place in a blender or meat grinder bowl. Twist the meat and onions into minced meat. For today's recipe we used fillet - it is skinless and boneless, so it is ideal for minced meat.


Add cooked cooled buckwheat to the minced meat.


Mix the minced meat and add spices to taste: salt and pepper. Spices can be used as desired and as varied as you like.


To ensure that the minced meat is not too liquid, add only the egg yolk. Mix thoroughly again.


With hands slightly moistened in water, form round buckwheat cookies and roll in flour.


Pour some vegetable oil into the frying pan and heat it up. Add the buckwheat so they immediately begin to sizzle and fry.


When the bottom side is browned, turn over and cook the buckwheat for a few more seconds to get a golden brown crust. The main thing is to quickly fry the buckwheat, and we will simmer and bring them to full readiness later.


Fry the pieces of sweet pepper and the remaining onion in a frying pan, fry for a short time, adding vegetable oil.


Add tomato paste to the pan - this will be the sauce for the buckwheat.

Pour in water and simmer the sauce over low heat for 10 minutes.


Place the fried buckwheat into the hot sauce and simmer all together for another 15 minutes. You can cover it with a lid so that the buckwheat is steamed.


Serve the finished dish with the sauce immediately to the table - this is both a side dish and a second course at the same time.

If you don’t have some ready-made buckwheat porridge left from dinner, then let’s start preparing the buckwheat porridge by preparing the cereal. We sort through the buckwheat, removing all the debris from it, rinse it thoroughly and put it in a saucepan. Pour boiling water (so the porridge will cook faster) in a ratio of 1:2, add a pinch of salt, place the saucepan on moderate heat and cook the porridge for about 10-15 minutes or until the cereal has absorbed all the water.


Let the finished buckwheat porridge cool completely.


In the meantime, prepare the minced meat. Cut one medium onion into small cubes (the smaller the better) or grate until pureed.


To the minced meat we add chopped onion, as well as dried herbs (any to your taste, in this case we used a mixture of parsley and dill), salt, pepper and ground garlic (it can be replaced with a couple of fresh cloves, which must be passed through a press). Mix the minced meat thoroughly.


Add the whole egg and mix again.


Add the cooled buckwheat to the prepared minced meat.


Mix thoroughly again so that the buckwheat is evenly distributed in the minced meat. When everything is thoroughly mixed, check our buckwheat base for salt and pepper. To do this, we form a small meatball out of it and send it to the microwave until fully cooked. We taste and, if necessary, add the missing seasonings to the minced meat.


From the prepared mixture of minced meat and buckwheat porridge, we form buckwheat cakes of the desired size. Roll each cutlet in flour on all sides.


And fry the buckwheat in batches until golden brown in a small amount of oil. Cook the buckwheat with minced meat in a frying pan until half cooked. Remove the finished buckwheat from the pan and set it aside for now.


Cut the remaining onion into medium cubes and send it to the frying pan in which the buckwheat with minced meat was fried. If necessary, add a little vegetable oil. Fry the onion over medium heat for several minutes.


Add to the onion tomato juice(if you don’t have juice on hand, then you can replace it with a mixture of tomato paste and water). Add a pinch of salt and pepper to it, as well as a little sugar and, if desired, dried herbs. Bring tomato sauce to a boil.


Dip the fried buckwheat into the boiling sauce and simmer over moderate heat for 15-20 minutes until fully cooked.

  1. Rinse the buckwheat and put it on the fire to cook, adding a little salt after boiling.

  2. While the porridge is cooking, peel the onions and carrots, wash them, then cut one onion into small cubes.

  3. Place the minced meat in a deep bowl, add chopped onion, beat in the egg, salt and pepper the minced meat, add spices to taste and mix everything thoroughly.

  4. Give the finished buckwheat a little time to cool, if necessary, draining excess water from it. For now, let's prepare the remaining vegetables for dressing: cut the second onion into cubes or half rings and grate the carrots.

  5. After this, add buckwheat to the minced meat, mix and form cutlets.

  6. Place the cutlets in a preheated frying pan with a small amount of vegetable oil and fry on both sides.

  7. Remove the fried cutlets from the frying pan and prepare the gravy: put onions and carrots in a frying pan with oil, sauté a little, then add the tomato and simmer for a few minutes. Add a little water to the gravy if necessary.

  8. Then place the cutlets in a frying pan with the gravy and simmer for about 15 minutes under the lid.
